A simple recipe for making soft, chewy, buttery caramels topped with sea salt.

Ingredients

Scale
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup heavy cream
  • 1 cup packed light brown sugar
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt (for the candy)
  • Flaky sea salt (for topping)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
  2. Combine the granulated sugar, corn syrup, brown sugar, heavy cream, and butter in a heavy-bottomed saucepan.
  3. Stir the mixture constantly over medium heat until the butter melts and the sugar dissolves.
  4. Stop stirring once the mixture boils. Insert a candy thermometer.
  5. Cook the mixture without stirring until it reaches 245 degrees Fahrenheit (soft-ball stage). This usually takes 15 to 20 minutes.
  6. Remove the pan from the heat immediately when 245 degrees is reached. Stir in the vanilla extract and 1/2 teaspoon of salt.
  7. Carefully pour the hot caramel mixture into the prepared baking pan. Do not scrape the sides of the pan.
  8. Let the caramel cool completely at room temperature for at least 3 hours, or until firm.
  9. Once firm, lift the caramel block out of the pan using the parchment overhang. Cut into 1-inch squares.
  10. Sprinkle the tops of the squares with flaky sea salt immediately after cutting.
  11. Wrap each caramel individually in wax paper or cellophane for storage.

Notes

  • Use a heavy-bottomed pot to prevent scorching the bottom of the caramel.
  • Wipe down the sides of the pot with a wet pastry brush during cooking to prevent sugar crystals from forming.
  • If you prefer a firmer caramel, cook the mixture to 248 degrees Fahrenheit.
